We are starting a new blog series called Real Life at the Jacobs’ – just to give a little insight into what’s going on in our lives: what we are doing, what matters to us, and our adventures! This week, in honor of all things October, I wanted to show off these mini pumpkin spice muffins I’ve been making once a week for the last 3 weeks! These ones, I added some mini chocolate chips for a little pizzazz.
I’ve been using a basic pumpkin spice muffin recipe from Lovely Little Kitchen. I substituted Namaste perfect gluten free flour blend and a little flax meal in place of the all purpose flour and since I did not have brown sugar, I just added a little molasses.
I like to use these silicon mini muffin molds I got a few years ago from DeMarle – they bake so evenly and pop so easily!
Most people who know us know that we have two very different, but adorable dogs:
- Phoebe, the Papillon, I have had since she was a puppy and she is now 8 years old. She just wanted to take a nap this afternoon
- Ted, the blond German Shorthaired Pointer. He is a rambunctious 3 year old dog that we just obtained last Spring. If you are in the kitchen, he wants to know what you are up to!
